Lyrup Crossing Chardonnay Wine - 18 Bottles: The excellent quality of the fruit at vintage led to the objective of making a fresh, lightly wooded wine with a degree of oak complexity. Hence, only free run juice was drawn after gentle airbag pressing and then cold settled at low temperatures before fermentation with selected yeast strains. Fermentation was arrested just prior to dryness, giving a wine with some residual fruit sweetness. It was then racked and aged on its yeast lees in a combination of French and American oak barrels to add further complexity. The colour is light straw. The lifted nose has white peach, delicious apple and cashew nut oak. This white peach follows through onto the palate along with some custard apple. The combination of the wine being left on lees and proportion in oak for six months has resulted in a wine with a creamy mouthfeel. The creaminess and the hint of spicy oak has given the wine some great length of flavour.

The colour is straw with green tinges. The very lifted nose has plenty of nectarines, the oak provides creamy notes and complexing barrel ferment characters. The palate is medium to full bodied with nectarine and melon fruit, balanced by a lovely creamy mouthfeel. The fruit is complemented by the well integrated nutty French oak and richness provided from the wine being left on lees for 10 months. The wine fi nishes long with cleansing acidity.
